Although Mavro is the most widely planted grape in Cyprus, it remains largely overlooked by winemakers due to the challenges it presents in crafting a full-bodied red that truly expresses its unique character. This sparked a different approach, to explore whether its potential could be unlocked through white winemaking.

Vinification

The unique climate and terroir of these vineyards provided the perfect conditions to experiment with crafting a white wine from red grapes, a true Blanc de Noirs. The harvest took place at night to preserve freshness and ensure optimal grape quality. Vinification followed a reductive approach to maintain a high aroma intensity, supported by the use of a Pied de Cuve for a native fermentation true to its natural expression. The wine remained in extended contact with its lees, with regular bâtonnage to enhance texture, depth, and complexity.

The name of this wine comes from its remarkable ability to shapeshift throughout the vinification process. Much like an ever-changing character, it seemed to evolve with every stage, its appearance, aroma, and character shifting in surprising ways, never quite settling into one form. Inspired by its constant transformation, we jokingly named it "Ben 10" in the winery, a nod to the famous shape-shifting cartoon character known for its endless versatility.
