‘Ydrias Sigi’
Xynisteri

  •

Dry white
The aim was to create another full-bodied white, but through a different path. While Heras Alma 2024, achieved richness through grape concentration and higher alcohol, this wine explores stabulation, a prolonged cold treatment of the must to enhance texture, body, and roundness.

Vinification

The selected vineyards showed the slowest maturation, preserving the ideal balance between sugar concentration and acidity. Harvested in early October, the grapes were processed under inert gases and dry ice before the must underwent *stabulation* at below 5°C for 25 days, with daily lees agitation. Fermentation was then initiated under controlled conditions and completed slowly by the end of November. The wine matured for six months in oak barrels, gaining complexity and stability, before being bottled unfiltered and without pumping.

Vinification Techniques used

Υδρίας σιγή

Ydrias Sigi (The Silence of Idria) was born from a moment of patience and stillness. During its extended contact with the fine lees, the wine remained quiet and protected, slowly evolving before revealing its character. During this period of waiting, a visit to the silent stone landscapes of Petra, Jordan inspired the idea that silence is not emptiness, but a moment of transformation. The name combines idria (vessel) and sigi (silence), reflecting a wine shaped by time, restraint, and quiet evolution.
