Vinification

The grapes were carefully selected from plots where freshness and skin integrity could be preserved. After a night of cooling, they were gently crushed and placed with their skins inside Antonis’ old pithari, allowing the clay vessel to become part of the fermentation journey. The skins were carefully managed throughout eight days of contact before the wine completed fermentation in the clay. It was then matured in stainless steel, bottled unfiltered and without pumping.

Avgi en Pilo (Sunrise in Clay) was named after the moment when this wine seemed to capture the first light of day inside the traditional pithari. During fermentation, the clay vessel slowly transformed the wine, revealing a beautiful orange glow, just like a sunrise trapped within its walls. The name celebrates this meeting of earth, time, and transformation.
